I'm new to this board and probably an "older" mother than most here, but I thought I'd respond to your question. Believe it or not, I guarantee that you and your husband will laugh about this incident in 10 years or so. Your reaction was understandable. However, by continuing to react with so much guilt and remorse about something your 3 year old saw only gives him more power than he's ready to have and I think that's probably the most damamging consequence here. I think that simply and matter-of-factly saying "mommy and daddy are grownups and love each other and we like to show our love to each other sometimes by kissing and hugging. We kiss each other's body parts when we have "private times" and we enjoy it. When we need privacy, our bedroom door will be closed and if you need us then, you need to knock on the door and wait for us to tell you to come in." ..."now - let's go see what's on TV, etc." Trust me - he'll soon move on to more interesting things on which to focus.
